Garlic, sherry, hoisin sauce, and almonds flavor diced pork in this quick Chinese stir-fry. The secret to this quick-cooked dish is cutting the pork into 1/2-inch pieces. Hoisin sauce is a mixture of soybeans, garlic, chile peppers, and spices. It can be found in the Asian section of the supermarket. A small amount of dry sherry is called for in the pork recipe. You can buy small bottles or splits of sherry at most liquor stores.


  • Stir-Fried Diced Pork1/4 cup dry sherry
  • 4 medium cloves garlic, crushed
  • 1 Tbs chopped fresh ginger or 1 teaspoon ground
  • 3/4 lb pork tenderloin, visible fat removed and cut into 1/2-inch cubes
  • 2 Tbs cornstarch
  • 1 Tbs hoisin sauce
  • 1 Tbs water
  • 2 tsp canola oil
  • 1 cup sliced celery
  • 2 Tbs slivered almonds
  • salt and freshly ground black pepper
  • 2 scallions, sliced (about 1/2 cup)
  • Chinese Noodles4 oz steamed or fresh Chinese noodles
  • 2 tsp canola oil
  • salt and freshly ground black pepper


  • Stir-Fried Diced PorkMix sherry, garlic, and ginger together. Marinate the pork in sherry mixture for 5 minutes while preparing other ingredients. Remove pork from mixture to a plate, reserving marinade. Sprinkle cornstarch over pork, toss together, and set aside. Mix hoisin sauce and water with reserved marinade. Heat oil in a wok or skillet and add pork to the wok. Stir-fry 1 minute. Add celery and almonds and stir-fry 1 minute. Add marinade to the wok and toss 30 seconds. Add salt and pepper to taste. Scatter scallions on top and spoon over Chinese Noodles.
  • Chinese NoodlesBring a large saucepan filled with water to a boil. Add the noodles and cook 1 to 2 minutes. Drain and toss with oil. Add salt and pepper to taste. Serve pork over noodles.

Variation: Low-sodium soy sauce can be substituted for the hoisin sauce.

Variation: Angel-hair pasta can be substituted for Chinese noodles.

Cooking Tip: For easy cooking, place the prepared ingredients on a cutting board or plate in order of use. You won't have to look at the recipe once you start to cook.
