Waldorf Chicken Salad
A salad created in the late 19th century, at the Waldorf-Astoria Hotel in New York City.
Ingredients
- 1 pinch kosher salt, or to taste
- 1 pinch pepper, or to taste
- 1 Tbs olive oil
- 4 boneless, skinless chicken breasts
- 4 ribs celery, diced
- 1 apple, diced
- 1 cup grapes, diced
- 1 lemon, juiced
- 1/4 cup chopped walnuts
- 1 Tbs chopped fresh thyme (optional)
- 1/2 cup mayonnaise (or plain Greek yogurt), up to 3/4 cup
Directions
- Salt and pepper chicken. Preheat skillet.
- Drizzle with olive oil. Brown chicken on each side and cook until done.
- Combine celery, apple, grapes, lemon, walnuts, thyme, salt, and pepper in a bowl.
- Let chicken cool and chop. Add to salad bowl. Add desired amount of mayonnaise.
- Refrigerate until ready to serve.
