Southern Fried Chicken
A foolproof way to make everyone's favorite fried dish.
Ingredients
- 1/4 cup vegetable oil for frying
- 2 eggs, beaten
- 2 Tbs Southern spice blend (or Cajun seasoning), divided
- 2 cups all-purpose flour
- 4 boneless, skinless chicken breasts
Directions
- Preheat oil for frying.
- Prepare the chicken. Beat the eggs in a bowl and add 1 tablespoon of the seasoning to the eggs; mix thoroughly.
- Pour the eggs over the chicken in a bowl and let this set, covered for about 15 minutes.
- Mix the flour and the other 1 tablespoon of seasoning together.
- Dredge the chicken in the flour and fry at 350°F over medium heat until the chicken is golden brown.
- You can check the internal temperature of the chicken to make sure it is 165°F. Drain the chicken on paper towels or a clean kitchen towel.
