For more flavorful pumpkin seeds, don't wash them before roasting.

Ingredients

  • 1 pumpkin, seeds removed (around 1 cup seeds)
  • 1 tsp kosher salt, or to taste

Directions

  • Preheat oven to 350°F.
  • Remove seeds from pumpkin. Pull off the stringy part from the seeds. Place the seeds in a single layer on a cookie sheet. Sprinkle with salt.
  • Stir the seeds around on the cookie sheet every few minutes to insure they caramelize evenly. Roast until brown and fragrant, about 45 minutes.
